The onion in this photograph being sliced and then diced is a yellow onion. Yellow Onions are sometimes called brown onions and is higher in sulfur than white onions.
The sulfur in onions produces a strong flavor and is also responsible for many of it's health benefits.
Onions in general are part of the Allium Genus of plants and contain allicin, calcium, manganese, sodium, sulfur, vitamins C and E, and curcumin.
Yellow onions make up 90% of all onions grown in the United States and is the most commonly grown onion in Northern Europe.
It is the sulfur content of onions that produce an odor both on your breath and skin that most people find unpleasant. However, it is also one of the contents that provides health benefits.
