Spanish Olives is a photograph taken by Kathy K. McClellan for Day Four of the Five Day Challenge with a specific theme: Green.
The most popular green olive sold in the United States is the green, pimento stuffed Spanish Olive. These olives are most likely the Manzanilla variety of olive that is picked before it is fully ripened. Since unripe olives are bitter they must be cured before eating. Curing can take anywhere from a few days to a few months.
Lye curing is the fastest and most Spanish olives are lye cured for a short period of time before curing in a salt and lactic acid brine.
Once they are cured, they are pitted and stuffed with pimento, almonds, anchovies, jalapenos, onions, or capers.
Spanish olives are most likely served on a condiment or snack tray, used in a cocktail such as a martini, placed in a salad or cooked in a tomato based sauce to give the sauce a spiced, salty flavor.
