Although we think of and call cucumbers a vegetable, it is botanically a pepo (a berry having a fleshy, many-seeded interior and a hard or firm rind).
There are many cultivators, almost all of which need pollination. Some are best for eating fresh either alone or in salads and some are best for pickling, including the Gherkins variety. There is even a burpless variety that produces less gas as it is being digested.
Cucumber fruit grows on a vine that will attach itself to a support with tiny tendrils. The leaves shade the fruits as they are ripening.
The cucumber originated in India and has been cultivated for over 3,000 years. It is a member of the Cucurbitaceae gourd family.
Cucumbers may be 95% water but the other 5% is packed with nutrition, including potassium, beta carotene, vitamin C, folate, vitamin K, and several phytochemicals. Because of the high water content they are useful for hydrating your body and as an ingredient in homemade beauty products or regimens.
